I Like ‘Em There Sweet ‘Taters!

sweetpotato.jpgSweet potatoes. I like sweet and I like potatoes…it just doesn’t get much better than that! I wasn’t always a sweet potato fan, in fact I hated them most of my life up until a few months ago. I live near a fairly large farm and after the farmer harvests his pick of the sweet potatoes we get what ever is left over. Whats left over is a boat load of great sweet potatoes that are just going to go to waste if someone doesn’t pick them. So yesterday and today I grabbed about 7 shopping bags full…free! Beats paying 79 cents a pound at the grocery store.

What are some health benefits of sweet potatoes? Sweet potatoes are high in vitamin A, potassium, dietary fiber, B6, Iron and Vitamin C. All this and low calories. Sweet potatoes are a great source of slow digesting carbohydrates and are also high in antioxidants.

When picking sweet potatoes its a good idea to pick ones without cracks, cuts and are fairly firm. You should store them in a cool dry place out of sunlight and an ideal temperature is about 60 degrees f. Avoid refrigerating them due to the fact that it can alter their taste.
